Ingredients for the pie
To make a pie, you will need the following products:
wheat flour – 4.8Oz (0,3 lb)
semolina – 5.6OZ (0,35 lb)
sugar – 6.4Oz (0,4 lb)
apples – 2 lb (6-7 ones of medium size)
butter – 4Oz (0,25 lb) + a little more for lubricating the mold
cinnamon – half a teaspoon
citric acid – a third of a teaspoon
baking powder for dough (soda) – an incomplete teaspoon
Apples are best taken sweet and sour, then the taste of the pie will be more lively, natural, with sourness. The butter must be frozen before use, as you will need to grate it before use, and this cannot be done with soft butter.
So, everything is ready, you can start.
Cooking process
Pour flour, semolina, sugar, baking powder, citric acid and cinnamon into a dry bowl. Mix everything thoroughly until a homogeneous dry mixture is obtained.
Peel apples and seeds. Grind them on a coarse grater. If the apples are not juicy, then you can add a little water and sugar, because your cake should be soaked well. There will be no problems with juicy apples, and you should not add anything.
Line a baking dish with foil, melt some butter and liberally grease the foil.
Further steps depend on which version of the cake you choose – with a crispy crust or soft filling on top. Divide the dry mixture into 3 parts. Divide the grated apples into 2 parts if you want to get a pie with a crust, or into 3 parts if you want a soft filling on top.
Pour 1 part of the dry mixture into a baking dish, put 1 part of the apples on it. Next, make the next layer – the second part of the mixture and the second part of the apples. Pour the third part of the mixture on top and, if you’ve divided the apples into 3 parts, then put the last layer of apples on top. As a result, you will have either a dry mixture or apples as the top layer. You can try both options and choose the one that you like best.
Grind the frozen butter on a coarse grater and distribute it evenly over the surface of the cake. If you don’t want to mess around with the grater, then you can cut the butter into thin slices and spread them on top of the cake.
Send the cake to the oven at 180 ° C and bake for about 50 minutes, enjoying the aroma. By the end of this time, the cake will brown.
Cool the finished cake without removing it from the mold. After cooling, when the filling seizes, you can take it out and cut it into squares or other pieces you like.
It is recommended to make this cake in the evening, so that during the night it not only cools down, but also completely soaks and seizes. It is great for a full breakfast with a cup of tea or coffee. Before serving, you can sprinkle with icing sugar, garnish with berries or a scoop of ice cream.
