Ingredients for approximately 60 healthy Christmas cookies:

250 g  (9 ounces) of almond flour

200 g  (7 ounces) of butter

125 g (4,5 ounces) of ground almonds

1 pinch of baking powder

150 g (5 ounces) of xylitol

3 egg yolks

1 vanilla pod

50 g (1,5 ounces) of powder for sprinkling on biscuits

Making Vanilla Almond Cookies:

Preheat the oven to 180 degrees (350° F) first. Then mix flour, butter and almonds with baking powder, xylitol, and egg yolks. Peel the vanilla pod and add the pulp. Carefully shape the dough into a round cookie and place on a baking sheet lined with baking paper. Bake for about 10 minutes. Meanwhile, mix the xylitol solution to obtain a powdery consistency. Then sprinkle the cookies with it and let them cool.

Healthy Christmas Cookies: Sugar-Free Gingerbread

An absolute Christmas classic: gingerbread! Unfortunately, popular baked goods are full of sugar and empty calories. Unless you accept our recipe for healthy Christmas cookies. (Xylitol does not affect blood sugar and prevents appetite)

Ingredients for approximately 40 healthy Christmas cookies:

600 g (20 ounces) of ground hazelnuts

200 g (7 ounces) of chopped almonds

500 g (15 ounces) of xylitol

6 eggs

1 pack of spices

5 g (0,25 ounces) of cinnamon

1/2 tsp of salt

Ingredients for Ginger Glaze:

300 g (10 ounces) of dark chocolate (ideally at least 85% cocoa).

80 g (3 ounces) of butter

Cooking sugar-free gingerbread:

Preheat the oven to 180 degrees (350° F) and mix all ingredients in a blender. Shape the dough into gingerbreads and put them gently on a baking sheet lined with baking paper. Bake for about 20 minutes and let them cool on a baking sheet. Finally, melt the chocolate in a small saucepan with butter and dip the Gingerbread cookies into it.

2 tablespoons of chia seeds (or alternatively flaxseed)

6 tablespoons of warm water

1 banana

4 dried dates

2 tablespoons of coconut oil (or olive oil)

200 g (7 ounces) of ground hazelnuts

Making Superfood Hazelnut Cookies:
Preheat the oven to 160 degrees (320° F) first. Mix the chia seeds with warm water and set aside for 10 minutes until the mixture has a gel-like consistency. Meanwhile, blend the banana and dates in a blender. Add healthy fats and stir again. Add half the hazelnuts to the mixture and stir again. Then mix the mixture in a large bowl with the chia gel and the remaining nuts. Finally, form small piles of dough and place them on a baking sheet lined with baking paper. Bake for 25 to 30 minutes, let them cool and enjoy.

Ingredients for approximately 30 healthy Christmas cookies:

1 tablespoon of chia seeds

2 tablespoons of water

250 g (9 ounces) of ground almonds

3 teaspoons of cinnamon

1 pinch of minced vanilla

100 g (3,5 ounces) of coconut sugar

2 tablespoons of maple syrup or honey

Cooking Healthy Cinnamon Stars:
Combine chia seeds with water and set aside in a small bowl for about 10 minutes. Meanwhile, mix ground almonds with cinnamon, vanilla and coconut sugar, maple syrup (or honey) and chia seeds. Stir with a hand mixer until a sticky dough forms. Wrap it in plastic wrap and refrigerate for about 30 minutes. In the meantime, preheat the oven to 180 degrees (350° F). Roll the chilled dough between baking paper to a thickness of 0.5–1 cm and cut into a star. Place the cinnamon stars on a baking sheet lined with baking paper and bake for about 10 minutes. Then let them cool for 10 minutes and remove from the sheet.

Healthy Christmas Cookies: Protein-Rich Cinnamon Almond Cookies

Ingredients for about 16 healthy Christmas cookies:

80 g of xylitol

1 egg white

1 pinch of salt

150 g (5 ounces) of ground almonds

1 g (0,05 ounces)  of cinnamon

30 g (1 ounce) of almond flakes

Cooking Protein-Rich Almond Cookies with Cinnamon:

Preheat the oven to 180 degrees (350° F). Grind the xylitol in a blender to create a powdered sugar substitute. Whisk the egg white very  with a pinch of salt. Then drain the xylitol powder, continuing to stir, until the mixture is shiny and silky. Combine ground almonds with cinnamon and almonds flakes and add the mixture of egg whites and xylitol. Form 16 balls with lightly buttered hands and place on a baking sheet lined with baking paper. Reduce the oven temperature to 80 degrees (170° F) and bake the cinnamon-almond cookies for 50 minutes. Then turn off the oven completely and let the Christmas cookies cool down in an oven for 30 minutes. Then remove them from the oven and let them cool and dry for at least 24 hours before enjoying.
